Ok so this recipe is as easy as pie and tastes divine. It's also on the healthier side as far as desserts go. It looks a lot prettier before it's baked so I'm only showing you a before picture! lol This is a great camping treat. But I love it so much that I eat at least one of these every week!
Stuffed Banana Boats
2 ripe bananas, with a few brown spots otherwise it won't taste as good at all! (one for you and one for your love)
2 sheets of tin foil
my toppings:
*chocolate chips, I like dark chocolate chips
*peanut butter chips, sometimes I'll use natural peanut butter
*flat marshmallows, the ones they make for smore's or mini marshmallows (this would be way cute with peeps for easter! lol)
*toasted coconut
*coconut whip
My hubby likes to put butterscotch chips on top as well.
Other possible toppings: caramel bits, cool whip, vanilla ice cream
Preheat oven to 350 degrees or preheat the grill medium heat. Slice banana in half lengthwise. Use your knife to spread the banana apart so you have room to stuff it. Place banana on top of foil. This is the fun part, stuff your banana with as many toppings as you like and really pack it in! You might want to start stuffing with marshmallows first, I like to do this so all the yummy goo doesn't end up stuck to the foil and not my banana.
Wrap banana up in a tent fashion. If baking in the oven place wrapped banana's on a cookie sheet and bake for 30-40 minutes until the marshmallows are melted. If placing on the grill bake for 15 minutes, until the marshmallows are melted.
One your bananas are baked and toppings are melted, remove the foil and you can either scoop your banana out of the skins or leave it in the skins and mix the toppings around with the banana so you get yummy goo in every bite. Then top with coconut whip, ice cream, or cool whip.
