Strawberry Cheesecake Trifle

This dish is great for easter or a baby shower.  It's one of those oohh and awwe crowd pleasers.  Not only is it lovely to look at but the taste is also lovely.  This is also great for those romantic moments when you just want to impress your spouse.  Divide the recipe in half, enough just for the two of you, and make two mini versions of this and you will both be in heaven!

Strawberry Cheesecake Trifle

2 quarts strawberries sliced
1 cup sugar, divided
2 (8 oz) packages cream cheese softened
3 tablesppons orange juice or lime juice (I prefer mine  squeezed fresh)
3 cup whipped whipping cream
1 loaf (10 oz) pound cake cubed (Sara Lee in the freezer section works great or the fresh loaves from Costco chilled overnight)
1 large chocolate bar grated (I like to use dark chocolate because it gives the dish a rich taste)
grated chocolate and strawberries to garnish

Toss strawberries with ½ sugar.  Allow to chill in refrigerator until juicy.  (About an hour)

Cream together the citrus juice, cream cheese and the remainder of the sugar.  Add whip cream and blend until creamy.  (Make sure you blend the cream cheese, citrus juice, and sugar first, or the acid will curdle the whipped cream.)

Drain juice off the strawberries and drizzle onto the cake cubes.

Layer in pretty trifle bowl as follows:
½ cake cubes on bottom
1/3 cream cheese mixture
½ strawberry mixture
Chocolate shavings
The rest of the cake cubes
1/3 cream cheese mixture
The rest of the strawberry mixture
Chocolate shavings
The rest of the cream cheese mixture
Chocolate shavings
Strawberries to garnish

Now get ready to taste loveliness!
